Potatoes With Haloumi & Peppers - cooking recipe

4 large baking potatoes, scrubbed
2 tbsp olive oil
1 tsp salt flakes
1 small red pepper, seeded and cut into chunks
1 small green pepper, seeded and cut into chunks
1 small yellow pepper, seeded and cut into chunks
7 oz haloumi cheese, sliced
None None Balsamic vinegar, salad greens and cherry tomatoes, to serve

Preheat the oven to 400\u00b0F. Prick the potatoes with a fork then rub with a little olive oil. Place on a baking sheet. Sprinkle with salt flakes.
Bake for about 1 hour 15 mins until soft when gently squeezed. Place peppers in a large baking pan and toss with remaining olive oil. Bake with the potatoes for the final 20-25 mins of cooking.
Preheat the broiler on high. Keeping the potatoes on the baking sheet, cut each potato in half lengthwise. Fill each potato half with the peppers and sliced haloumi cheese. Season generously with freshly ground black pepper.
Broil for 3-5 mins until the peppers and cheese are lightly charred and golden. Serve immediately with a dash of balsamic vinegar, salad greens and cherry tomatoes.
