Muesli Muffins - cooking recipe

Ingredients
    2 None eggs, lightly beaten
    1 1/4 cups milk
    3/4 cup light olive oil
    3 medium bananas, chopped
    2 1/2 cups whole wheat self-rising flour
    1/2 cup oat bran
    3/4 cup muesli
    1 tsp baking soda
    1 cup firmly packed brown sugar
    1 tsp ground cinnamon
    1/2 cup craisins or raisins
    1/2 cup chocolate chips (optional)
Preparation
    Preheat the oven to 400\u00b0F. Line 16 cups of two 12-cup muffin pans with paper liners.
    Combine eggs, milk, olive oil and banana in a large bowl. In a second large bowl, combine flour, bran, 1/2 cup of the muesli, baking soda, sugar, cinnamon, craisins and chocolate chips, if using.
    Add banana mixture to flour mixture and stir until mixture is just combined. Do not over-mix. Divide among prepared muffin pans. Sprinkle each muffin with a little of the remaining 1/4 cup muesli.
    Bake for 25-30 mins until toothpick inserted into center comes out clean. Cool in pan 5 mins. Remove from pan; cool completely on wire rack.
