Spinach And Ham Salad With Croutons - cooking recipe

Ingredients
    1 None red onion, peeled and finely chopped
    1 clove garlic, pushed through a garlic press
    4 slices ham, cut into thin strips
    3 tbsp oil
    1 tsp mustard
    5-6 tbsp orange juice
    5 tbsp tomato juice
    3 slices bread, crusts removed and cubed
    1 lb baby leaf spinach
    4 oz thick-cut ham, cubed
Preparation
    Heat 1 tbsp of oil in a frying pan and saute the ham strips. Lift them out of the pan, drain on paper towel and set aside.
    For the dressing, saute the onion and garlic in the same pan 2 mins, then add the mustard, orange juice and tomato juice. Season, then simmer 1-2 mins. Pour into a bowl and cool.
    For the croutons, heat 2 tbsp of oil in a nonstick frying pan and cook the bread cubes until they are crispy and golden brown. Season with salt, then remove from the pan and drain on paper towel.
    Toss the spinach, ham cubes and ham strips in a salad bowl. Toss in the dressing and sprinkle with the croutons to serve.
