Chicken Cacciatore - cooking recipe

Ingredients
    2 tbsp olive oil
    3 1/3 lbs chicken pieces
    1 None onion, chopped
    1 clove garlic, crushed
    1/2 cup dry white wine
    1/2 cup chicken stock
    1 can (14 oz) diced tomatoes
    1 tbsp tomato paste
    1 tbsp chopped fresh basil, plus additional to serve
    1 tsp sugar
    1/2 cup black olives
    3 None anchovy fillets, chopped
    None None Pasta and salad, to serve
Preparation
    Preheat the oven to 350\u00b0F. Heat oil in a heavy-bottomed skillet on high heat. Brown chicken all over. Transfer to a baking dish.
    Saute onion and garlic in same pan for 2-3 mins, until onion is tender. Add wine and simmer until reduced by half.
    Stir in stock and simmer for 2 mins. Stir in tomatoes, tomato paste, basil and sugar. Season to taste. Pour sauce over chicken.
    Bake, covered, for 1 hour. Stir in olives and anchovies. Bake, uncovered, for a further 5-10 mins. Sprinkle with additional basil. Serve with pasta and salad.
