Meatballs With Fava Beans And Tomatoes - cooking recipe

Ingredients
    2 lbs potatoes, peeled and cubed
    7 tbsp oil
    14 oz frozen fava beans
    1 cup Greek yogurt
    3 tbsp chopped mint
    2 lbs lean ground beef or lamb
    1 tbsp tomato paste
    1 tsp Dijon mustard
    1 None egg
    2 None onions, chopped
    2 cloves garlic, crushed
    14 oz cherry tomatoes, halved
    1/2 tsp sugar
    4 tbsp chopped parsley, plus additional sprigs, to garnish
Preparation
    Preheat the oven to 400\u00b0F. Toss the potatoes with 3 tbsp of the oil and a little salt. Place in a single layer in a baking pan. Roast for about 45 mins until deep golden, turning once or twice.
    Cook the beans in boiling water for 3 mins. Drain and squeeze the beans out of their white skins. Mix the yogurt, mint and a little salt and pepper and transfer to a small serving dish.
    Mix the ground meat, tomato paste, mustard, egg, 1/2 the onions and the garlic. Season with salt and pepper and mix well. Shape into 8 meatballs.
    Heat 2 tbsp of the oil in a large skillet on medium-high heat. Cook the meatballs on all sides until cooked through. Remove from the pan. Heat the remaining 2 tbsp oil in the pan. Add the remaining onions and garlic and saute for 3 mins. Sprinkle with the sugar and season with salt and pepper.
    Add the meatballs, beans, tomatoes and parsley to the pan and cook for 5 mins until heated through. Garnish with parsley sprigs. Serve with the potatoes and mint yogurt.
