Sausage And Kale Soup - cooking recipe
Ingredients

750 g kale, washed and tough stalks removed
250 g carrots, peeled and sliced
400 g potatoes, peeled and cubed
1 None onion
50 g smoked bacon, cut into small cubes
1 litre instant vegetable stock
2 tbsp oil
300 g sausage meat, seasoned and made into small balls
Preparation

Blanch the kale in boiling water for 2 mins, then rinse and drain in a colander. Coarsely chop the kale. Cook the bacon in a large saucepan, then remove, leaving the fat in the pan. Saute the onion in the bacon fat briefly. Add the kale. Slowly add the hot stock, deglazing the sticky juices from the pan. Cover and cook for 50-60 minutes. After about 30 minutes, add the potatoes and carrots.
Heat the oil in a frying pan and add the sausage balls, pressing each one down slightly for ease of cooking. Cook until golden brown and remove to drain on a paper towel. Just before the end of cooking, add the sausage. Season to taste and serve.
