Beef Enchiladas - cooking recipe

Ingredients
    4 tbsp oil
    2 None onions, peeled and finely diced, separated
    1 clove garlic, peeled and chopped finely
    3/4 lb ground beef
    1/2 cup Mexican seasoning
    1 cup corn
    2 tbsp tomato paste
    1 can (14-15 oz) chopped tomatoes
    1/4 cup drained, sliced pickled jalapenos
    8 None 6-inch corn tortillas
    3 tbsp sour cream
    3/4 cup crumbled queso fresco or feta cheese
Preparation
    Heat 2 tbsp of oil in a frying pan and saute 1 onion, garlic, and ground beef for about 5 mins. Add the Mexican seasoning and corn and season to taste.
    In a separate pan, saute the other onion in the remaining oil. Stir in the tomato paste and chopped tomatoes and simmer it for about 5 mins. Add the jalapenos.
    Preheat the oven to 400\u00b0F. Warm the tortillas very briefly and spread them with the meat sauce. Roll them up and put them in a baking dish. Pour the tomato sauce over them, followed by the sour cream and cheese. Bake them for about 15 mins.
