Chocolate Mud Cake - cooking recipe

1 cup plus 2 tbsp (2 1/4 sticks) butter, chopped
2 1/4 cups granulated sugar
7 oz semi-sweet chocolate, chopped
1 tbsp instant coffee
1 tsp vanilla extract
1 cup flour
1/2 cup self-rising flour
1/4 cup unsweetened cocoa powder
2 None eggs, lightly beaten
1/2 cup heavy cream
7 oz milk chocolate, chopped
None None Powdered sugar, for dusting
None None Mixed berries, to serve
Preparation

Preheat the oven to 300\u00b0F. Lightly grease and flour a 9-inch square baking pan.
Place butter, granulated sugar, semi-sweet chocolate, 1/2 cup water, coffee and vanilla in a large saucepan on low heat. Stir until smooth. Transfer to a large bowl and cool for 15 mins. Sift flours and cocoa powder into a medium bowl. Stir eggs then flour mixture into the batter. Pour into prepared pan.
Bake for 1 to 1 1/4 hours. Cool in pan 10 mins. Remove from pan; cool completely on a wire rack.
For the ganache, heat cream in a small saucepan on medium heat until almost boiling. Remove from heat. Add milk chocolate, stirring until melted and smooth. Let stand for about 1 hour until spreadable. Spread over cooled cake. Dust with powdered sugar and serve with berries.
