Parmesan Chicken With Creamy Basil Dressing - cooking recipe

3 strips bacon, finely chopped
2.5 oz fresh breadcrumbs
1 oz Parmesan, grated
2 tbsp flat leaf parsley, finely chopped
1/4 cup butter, melted
2 cloves garlic, crushed
1 tsp Worcestershire sauce
1/2 tsp mustard powder
4 None chicken breasts (about 6 oz each)
None None Creamy Basil Dressing
1 oz basil, leaves finely chopped
1/3 cup heavy cream
1 tbsp olive oil
3 tsp malt vinegar
3 tsp red wine vinegar
1 clove garlic, crushed
None None Spinach leaves, to serve
Preparation

Preheat oven to 400\u00b0F. Cook bacon in a frying pan on high heat for 3 mins, until crisp. Mix with breadcrumbs, Parmesan and parsley.
Combine butter, garlic, Worcestershire sauce and mustard in a shallow bowl. Add chicken; turn to coat.
Meanwhile, to make creamy basil dressing, combine all ingredients in a small saucepan on high heat. Bring to a boil. Reduce heat to low; simmer for 2-3 mins, until thickened slightly.
Transfer chicken to a baking dish. Press breadcrumb mixture over top. Bake for 12-15 mins, until chicken is cooked and breadcrumbs are golden.
Rest for 5 mins, then serve with basil dressing and spinach.
