Onion Soup - cooking recipe
Ingredients

1 tbsp oil
40 g smoked bacon, cut into strips
3 None medium onions, peeled and sliced into rings
2 sprigs fresh thyme, leaves stripped from stems
500 ml vegetable stock
2 slices baguette bread
15 g Gruyere, grated
3 None spring onions, cut into diagonal slices
Preparation

Heat the oil in a pan and cook the bacon until crispy. Remove from the pan and drain on paper towels. Add the onions to the pan and saute until softened. Add the thyme and saute for 1 min. Add the stock and simmer for 10 mins.
To serve, preheat the broiler. Sprinkle the baguette slices with the cheese and broil until golden brown. Add the spring onions to the soup and simmer for 8 mins. Season the soup then ladle into a bowl. Top with the baguette slices and sprinkle with the bacon.
