Lamb With White Bean Salad - cooking recipe
Ingredients

1 can (15 oz) cannellini beans, drained and rinsed
1 medium ripe tomato, finely chopped
1 medium ripe avocado, finely chopped
1/4 cup finely chopped flat-leaf parsley
2 tbsp finely chopped chives
2 tbsp finely chopped basil
2 tbsp lemon juice
2 tbsp vegetable oil
2 tsp wholegrain mustard
1 clove garlic, crushed
4 None lamb loin chops
Preparation

Combine beans, tomato and avocado in a large bowl.
Combine herbs, lemon juice, oil, mustard and garlic in a medium bowl. Stir half the herb mixture into bean salad.
Heat an oiled grill pan on medium-high heat or preheat the grill to medium. Season the lamb chops. Cook for 3-4 mins each side for medium or until cooked to desired doneness.
To serve, place bean salad on plates. Top with lamb and remaining herb mixture.
