2 pints good quality vanilla ice cream
5.25 oz chocolate chip cookies
1 lb strawberries, hulled and chopped
Preparation

Remove the ice cream from the freezer and transfer to a bowl. Chop up with a knife and leave to soften for 5 mins.
Place the cookies in a freezer bag and roughly crush with a rolling pin. Add nearly all the crushed cookies and strawberries to the ice cream, reserving some for garnish. Stir to mix. To make individual servings, divide among 6 small freezer safe bowls, each lined with plastic wrap. For a single bombe, transfer to into a 4 cup loaf pan lined with plastic wrap. Press down firmly, then freeze for 2-3 hours or overnight.
To serve, remove from the freezer and transfer to serving dishes. Remove the plastic wrap and garnish with the remaining crushed cookies and chopped strawberries. If made in the loaf pan, cut into slices to serve.
