Vegetable Casserole - cooking recipe

Ingredients
    1 tbsp oil
    1 None onion, chopped
    2 cloves garlic, crushed
    1 3/4 lbs zucchini, sliced
    4 None medium potatoes, peeled, cut into cubes
    4 stalks celery, sliced
    1 x 14 oz can chopped tomatoes
    2 tbsp oregano, chopped
    2.5 oz fresh breadcrumbs
    2.75 oz Parmesan, grated
    2 tbsp parsley, chopped
Preparation
    Preheat oven to 400\u00b0F. Heat oil in a large saucepan on medium heat. Cook onion for 5 mins, stirring, until soft and golden. Add garlic and cook for 1 min.
    Add zucchini, potatoes, celery, tomatoes, oregano and 1/2 cup water. Cover and simmer for 25 mins, or until potatoes are tender. Pour vegetable mixture into an 8 1/2 cup baking dish.
    Mix together breadcrumbs, Parmesan and parsley and sprinkle over vegetables. Bake for 20 mins, until top is golden. Serve.
