Mocha Pudding With Vanilla Whipped Cream - cooking recipe

Ingredients
    1 cup self-rising flour
    1 tbsp instant coffee
    2 1/2 tbsp cocoa powder
    3/4 cup brown sugar
    1/2 cup low-fat milk
    1 None large egg
    3 tbsp butter, melted
    1 1/2 tsp vanilla extract
    2 1/2 oz dark chocolate, melted
    3/4 cup heavy cream
Preparation
    Preheat oven to 350\u00b0F. Lightly grease a 5 cup ovenproof dish. For the pudding, sift the flour, coffee and 1 tbsp cocoa powder into a medium bowl. Stir in 1/4 cup of the brown sugar. In a separate bowl, whisk the milk, egg, butter and 1 tsp vanilla extract. Gradually whisk into the dry ingredients. Add the chocolate and whisk until smooth, then spoon the batter into the prepared dish and level the top.
    For the sauce, combine 1 1/4 cups boiling water with the remaining sugar and cocoa powder in a heatproof bowl. Carefully pour onto the pudding. Bake for 20-25 mins, or until firm. Cool for 5 mins.
    Meanwhile, using an electric mixer, beat the cream and 1/2 tsp vanilla extract in a small bowl until soft peaks form. Serve with the pudding.
