Salmon And Spinach Phyllo Packets - cooking recipe

Ingredients
    1 2/3 lbs spinach
    6 sheets phyllo dough
    6 None salmon fillets (5-6 oz each)
    3 cups jarred tomato pasta sauce
Preparation
    Preheat the oven to 425\u00b0F. Grease and line a baking pan with parchment paper.
    Boil, steam or microwave spinach until wilted. Rinse under cold water; drain. Squeeze out excess liquid; chop coarsely.
    For each packet, spray a sheet of phyllo with no stick cooking spray. Fold in half widthwise. Place a salmon fillet in center of phyllo. Top with one-sixth of the spinach. Fold in sides of phyllo and roll to enclose filling. Place on prepared pan, seam-side down. Spray with cooking spray.
    Bake for 15 mins, or until phyllo is lightly browned and fish is cooked to desired doneness.
    Bring sauce to a boil in small saucepan. Serve with packets.
