7 tbsp unsalted butter, at room temperature
1/2 cup sugar
1 large egg
1/3 cup self-raising flour
3/4 cup all purpose flour
1/2 cup raspberry jam, warmed

2 large eggs, lightly beaten
2 cups shredded coconut
Preparation

Preheat oven to 350\u00b0F. Grease and line base and sides of a 8 x 12 inch brownie pan, extending paper above the rim at long sides for handles.
Using an electric mixer, beat butter and sugar in small bowl until pale and creamy. Add egg and beat until combined. Stir in flours. Spoon mixture into prepared pan and smooth surface. Spread jam over the top.
To make topping: Combine egg, sugar and coconut in a medium bowl. Sprinkle over the jam layer.
Bake 35-40 minutes, until golden brown. Remove from oven. Cool completely in the pan. Cut into squares to serve.
