Chicken And Bean Burritos - cooking recipe

Ingredients
    1 medium lime
    1/4 medium red onion, finely chopped
    1 None fresh long green chili pepper, finely chopped
    1 medium tomato, coarsely chopped
    1/4 cup coarsely chopped fresh cilantro
    1/2 cup rinsed, drained canned red kidney beans
    1/2 cup coarsely grated Cheddar cheese
    1 cup cooked white long-grain rice
    1 medium ripe avocado
    4 large (9-inch) flour tortillas
    1 1/2 cups shredded rotisserie or roast chicken
    None None Freshly ground black pepper and salt, to season
Preparation
    Finely grate 1 tsp of peel from lime; squeeze 2 tbsp juice from lime.
    Combine onion, chili peppers, tomato, cilantro, lime peel, beans and cheese in large bowl.
    Microwave rice for about 30 seconds on high (100%) or until heated through. Add to bowl with half the lime juice; season to taste.
    Peel avocado; mash in a small bowl with remaining lime juice. Season to taste.
    Place tortillas on sheets of parchment paper. Spread a quarter of the avocado onto each tortilla; top with chicken and rice mixture. Roll firmly to enclose filling; wrap in paper.
