Hot And Sour Shrimp Soup - cooking recipe
Ingredients

4 cups chicken stock
2 None stalks lemongrass, halved lengthwise and cut into 1-inch pieces
6 None kaffir lime leaves, shredded
1 piece (2 inches) fresh ginger, peeled and thinly sliced
8 oz extra large shrimp, peeled and deveined
5 oz oyster mushrooms, sliced
6 None green onions, shredded
1-2 small red chili peppers, sliced
1/4 cup fresh lime juice
2 tbsp soy sauce
1 tbsp fish sauce
3 tbsp chopped cilantro
1 cup bean sprouts
None None Fried cellophane noodles, to serve (optional)
Preparation

Place stock, lemongrass, lime leaves and ginger in a large saucepan on high heat. Bring to a boil.
Add shrimp, mushrooms and onions. Reduce heat to low; simmer for 2-3 mins or until shrimp are pink and tender. Stir in chili peppers, lime juice, soy sauce, fish sauce, cilantro and bean sprouts.
Ladle into soup bowls. Garnish with fried cellophane noodles, if desired.
