Roasted Baby Veggies With Garlic And Orange Zest - cooking recipe

Ingredients
    9 oz baby potatoes, scrubbed
    9 oz baby carrots, tops trimmed
    9 oz baby beets, scrubbed, stalks trimmed
    2 cloves garlic, peeled
    1/4 cup olive oil
    1 None orange, zested
Preparation
    Preheat oven to 350\u00b0F. Blanch potatoes and carrots in boiling salted water for 10 mins, or until tender. Blanch beets in a separate saucepan of boiling salted water for 10 mins.
    Crush garlic with some salt and black pepper in a mortar and pestle. Mix in oil and orange zest.
    Transfer vegetables to a large roasting pan and toss with olive oil mixture. Roast for 10-15 mins, until golden brown and tender. Serve.
