Pear And Ginger Cookies - cooking recipe

Ingredients
    1 cup butter, softened
    1/2 tsp vanilla extract
    1 cup powdered sugar, sifted
    1 None large egg
    1 oz dried pears, finely chopped
    2 oz candied ginger, roughly chopped
    1/2 cp rolled oats
    1 3/4 cups all-purpose flour, sifted
    1/2 tsp baking soda
Preparation
    Preheat oven to 325\u00b0F. Grease 2 baking trays and line with parchment paper.
    In a stand mixer, beat butter, vanilla, powdered sugar and egg until light and fluffy. Stir in pears, ginger and oats then fold in flour and baking soda, in 2 batches.
    Roll level tablespoons of dough into balls. Place on trays 1 inch apart and bake for 15 mins, or until golden brown. Let cool on trays.
