Chicken Drumsticks With Cabbage Slaw - cooking recipe

Ingredients
    1 None green cabbage (about 2 1/4 lbs), shredded
    1 large onion, finely chopped
    1/2 tsp salt
    1 None red pepper, seeded and thinly sliced
    3 tbsp coarsely chopped parsley
    10 tbsp mild olive oil
    3 tbsp white wine vinegar
    4 tsp granulated sugar
    2 tsp ground paprika
    18 None chicken drumsticks
    None None Parsley sprigs, to garnish
Preparation
    For the cabbage slaw, toss the cabbage with the onion and salt in a bowl. Let stand for 30 minutes. Stir in the red pepper and chopped parsley. Mix 6 tablespoons of the oil, vinegar and 2 tsp of the sugar with a wire whisk until well blended. Add to cabbage mixture; toss to coat. Set aside.
    Preheat the oven to 350\u00b0F. Mix the remaining 4 tbsp oil, paprika, remaining 2 tsp sugar and a pinch of salt. Arrange the chicken in a large roasting pan. Brush with the paprika mixture. Bake for 45 minutes or until golden and cooked through.
    If desired, wrap pieces of parchment paper around the ends of the chicken drumsticks and secure in place with string. Transfer to a serving plate. Garnish with parsley. Serve with the cabbage slaw.
