Pumpkin And Sunflower Seed Ciabatta With Spiced Feta - cooking recipe

2 1/2 tsp fresh yeast, crumbled or 3 1/2 tsp active dry yeast
4 1/3 cups bread flour, plus extra for dusting
1/3 cup pumpkin seeds
2/3 cup sunflower seeds
8 sprigs fresh thyme, leaves picked and chopped, plus extra leaves to garnish
1-2 None chilies, deseeded and finely chopped, plus extra to garnish
2/3 lb feta cheese
4 tbsp yogurt
Preparation

For the ciabatta, warm 2 cups water then add yeast and stir until dissolved. Mix together flour, pumpkin seeds, sunflower seeds and 1/2 tbsp salt. Add the yeast mixture and stir with a wooden spoon. Turn out onto a lightly floured work surface and knead until the dough is smooth. Place in a large oiled bowl, cover with plastic wrap and set aside to rise until doubled in size.
Preheat oven to 400\u00b0F. Line a baking sheet with parchment paper. On a lightly floured surface, de-gas the dough and knead briefly. Shape into 8 small loaves. Transfer to the prepared baking sheet and bake for 25 mins until golden and cooked through.
Meanwhile, make the spiced feta topping. Mix thyme, chilies, feta, yogurt and season to taste. Serve on sliced ciabatta. Garnish with the extra chili and thyme leaves.
