Penne With Caramelized Vegetables - cooking recipe

Ingredients
    1/4 lb penne pasta
    2 tbsp granulated sugar
    2 cloves garlic, peeled and minced
    1 None fresh bay leaf
    1/2 cup red wine vinegar
    1 lb button mushrooms
    3 oz shallots, peeled and halved
    1 sprig fresh rosemary, leaves stripped from stem, plus extra for garnish
    1/4 lb cherry tomatoes
Preparation
    Cook the pasta in boiling salted water for 8 mins. Drain and set aside.
    In a saucepan, melt the sugar over low heat until golden brown. Add the garlic, bay leaf, vinegar and 3/4 cup water. Stir in the mushrooms and shallots and cook for 10 mins. Add the rosemary and season.
    To serve, add the pasta and tomatoes and heat through. Serve warm or cold, garnished with rosemary.
