Lamb And Pomegranate Pizza - cooking recipe

Ingredients
    2 tsp olive oil
    1 tsp finely grated lemon peel
    1/4 tsp ground cumin
    None None Pinch red pepper flakes
    7 oz lamb fillet
    1/2 cup hummus
    2/3 cups yogurt
    2 large (12-inch) prepared pizza crusts
    1 medium pomegranate, cut in half crosswise
    1/2 cup loosely packed fresh mint leaves
    1/2 cup loosely packed fresh cilantro leaves
    1 medium lemon, cut into wedges
Preparation
    Combine oil, lemon peel, cumin and red pepper flakes in a shallow dish. Add lamb; turn to coat. Cover; refrigerate 20 minutes.
    Meanwhile, combine hummus and half the yogurt in a small bowl; season to taste.
    Preheat the oven to 450\u00b0F. Oil two baking or pizza pans; place in oven while heating.
    Place pizza crusts on heated pans. Spread with hummus mixture. Bake 10 mins or until crusts are browned and crisp.
    Meanwhile, cook lamb on heated oiled grill pan on medium-high heat, for 3 mins each side or until cooked to desired doneness. Remove from heat. Cover; let stand 5 mins, then slice thinly.
    Remove seeds from pomegranate by holding each half, cut-side down, in the palm of your hand over a bowl. Hit the outside of the fruit with a wooden spoon. Seeds should fall out easily.
    Top pizzas with lamb and herbs. Sprinkle with pomegranate seeds and drizzle with remaining yogurt. Serve with lemon wedges.
