Cheesy Ham And Asparagus Omelettes - cooking recipe

Ingredients
    12 oz asparagus, trimmed
    8 None large eggs
    1/3 cup heavy cream
    1 oz coarsely grated Parmesan cheese
    1 oz coarsely grated Cheddar cheese
    2 tbsp finely chopped fresh chives
    4 tbsp butter
    4 tsp olive oil
    3.5 oz sliced ham, cut into strips
Preparation
    Boil, steam or microwave asparagus until tender. Drain.
    Meanwhile, lightly whisk eggs, cream, 2 tbsp water, cheese and 1 tbsp chives until combined. Season.
    Heat 1 tbsp butter and 1 tsp oil in a small frying pan over medium-high heat. When butter is just bubbling, add 1/4 of egg mixture and tilt pan to cover base. Cook over medium heat until omelette is just set. Place 1/4 of asparagus and 1/4 of ham on 1 side of omelette. Use a spatula to lift and fold omelette in 1/2 over asparagus and ham. Cook for another 30 seconds. Carefully slide omelette onto a serving plate. Wipe out pan and repeat to make 3 more omelettes.
    Serve immediately topped with remaining chives.
