Scallop Bites With Avocado And Lime - cooking recipe
Ingredients

1 None ripe avocado, peeled, pitted and diced
2 None limes
None None Sea salt flakes
16 None scallops, trimmed and rinsed
1 1/2 tbsp olive oil
16 None blue corn chips
3 None iceberg lettuce leaves, shredded
None None Salsa and chopped cilantro, to serve
Preparation

Place the avocado in a bowl and squirt generously with lime juice, then season with sea salt.
Pat the scallops dry with paper towels. Coat with 1 tbsp of the oil. Heat a heavy-bottomed skillet on medium-high heat for a few minutes. Add remaining 1/2 tbsp olive oil and heat until the oil is hot.
Add the scallops carefully one by one, using spoons and spacing them apart. Cook quickly until golden, then turn and cook until just cooked through.
Stack the corn chips with lettuce, avocado, salsa, scallops, a little lime juice and cilantro. Serve immediately.
