Vietnamese Beef Salad - cooking recipe
Ingredients

1 tbsp peanut oil
2 lb beef tenderloin, trimmed
1/2 cup spicy salad dressing
1 lb mixed cherry tomatoes, halved
10 oz mixed greens
1/4 cup fresh mint leaves
Preparation

Heat oil in a medium frying pan. Cook beef for 3 mins per side, or until cooked to your liking. Transfer to a large serving plate and drizzle with 2 tbsp dressing. Cover and let rest for 5 mins. Slice thinly.
Combine tomatoes, mixed greens, mint and remaining dressing in a large bowl. Season. Serve topped with beef.
