Low Fat Curried Rice Salad - cooking recipe

Ingredients
    1 None small apple (about 100g), cored and sliced
    1 tsp lemon juice
    50 g long-grain rice
    1 None carrot (about 70g), peeled, halved lengthways and sliced
    1/2 None red pepper, deseeded and cut into strips
    150 g low-fat yogurt
    1/2 tsp curry powder (or according to taste)
    None None Salad cress, to garnish
Preparation
    Cook the rice in boiling salted water according to the package directions. Transfer rice to a bowl. Set aside to cool.
    Sprinkle the apple with the lemon juice to prevent browning. Toss the rice, apple, carrot and pepper in a serving bowl. Stir the curry powder into the yogurt and season with salt and black pepper. Drizzle the dressing over the salad.
