Potato And Thyme Gratin - cooking recipe

Ingredients
    3 1/2 tbsp butter
    1 None onion, thinly sliced
    2 tbsp flour
    1 cup milk
    2 tsp finely chopped fresh thyme leaves
    4 oz grated Cheddar cheese
    1 1/4 lb roasted potatoes, halved, crushed
Preparation
    Preheat oven to 425\u00b0F. Oil 4 - 8 oz shallow ramekins.
    Melt 1 tbsp butter in a medium pan over medium heat. Cook onion, stirring, until softened. Remove from pan.
    Add remaining butter to pan. Cook flour, stirring, until mixture thickens. Gradually stir in milk and cook, stirring, until sauce boils and thickens. Remove from heat and stir in thyme and 1/2 the cheese.
    Combine crushed potatoes and onion mixture. Add white sauce and mix to combine. Transfer to ramekins and sprinkle with remaining cheese. Bake for 20 mins, or until browned lightly. Serve.
