Pineapple And Prawn Noodles With Chili Lime Dressing - cooking recipe

Ingredients
    8.75 oz rice noodles, soaked in boiling water for 5-8 mins then drained
    1 lb cooked prawns, peeled and deveined
    1/2 None fresh pineapple, peeled, cored and chopped
    4 oz cherry tomatoes, halved
    2 tbsp fresh cilantro leaves, roughly chopped + extra, to garnish
    3 None spring onions, trimmed and sliced
    1/4 cup lime juice
    2 tbsp sweet chili sauce
    1 tbsp sesame oil
    2 tsp fish sauce
    2 tsp brown sugar
    2 cloves garlic, peeled and minced
    1 None red chili, deseeded and sliced
    1 tsp fresh ginger, finely grated
Preparation
    Combine noodles, prawns, pineapple, tomatoes, cilantro and spring onions.
    Whisk together remaining ingredients then toss with noodle mixture and garnish with extra cilantro leaves.
