Herb And Lemon Roasted Potatoes - cooking recipe

2 lb baby red potatoes, halved
2 tbsp olive oil
1 None large lemon, cut into 6 wedges
1 sprig fresh thyme, plus 2 tsp chopped to garnish
1 sprig fresh oregano, plus 2 tsp chopped to garnish
Preparation

Preheat oven to 425\u00b0F. Toss potatoes with olive oil and lemon. Season. Place in a roasting pan along with herb sprigs. Roast for 20 mins, until tender. Sprinkle with fresh herbs to serve.
