Ingredients

1 1/3 cups butter, softened
2 tsp vanilla extract
2 cups powdered sugar
1 1/4 cups walnuts, roasted, finely chopped
3 cups all purpose flour
Preparation

Preheat oven to 350\u00b0F. Line 2 baking trays with parchment paper.
Beat butter, vanilla and 1 cup of powdered sugar in a large bowl with an electric mixer until light and fluffy. Stir in the walnuts and flour.
Roll level tablespoons of dough into balls and place about 2 1/2 inch apart on prepared trays. Bake for 12 mins, or until pale golden. Cool for 2 mins.
Sift remaining powdered sugar on to a plate and gently roll cookies in it. Transfer to a wire rack and allow to cool completely.
Dust again with sifted powdered sugar just before packaging or serving.
