Chicken And Leek Parcels - cooking recipe

Ingredients
    2 tbsp butter
    1 None small leek, pale section only, thinly sliced
    1 tbsp all-purpose flour
    3/4 cup milk
    1 tsp wholegrain mustard
    4 sheets filo dough
    2 None cooked chicken breasts, skin-on
    1 tsp cumin seeds
    None None mixed greens, to serve
Preparation
    Preheat oven to 400\u00b0F. Line a baking tray with parchment paper. Melt butter over medium heat, add leek and cook, stirring, for 5 mins, or until soft. Add flour and cook for 1 min. Gradually whisk in milk and stir until smooth. Bring to a boil, reduce heat and simmer for 1-2 mins, or until sauce thickens. Add mustard and season. Let cool for 5 mins.
    Lightly coat 2 sheets of filo dough with oil. Place remaining filo dough on top. Place chicken breast along short end of filo dough and cover with sauce. Roll up to form a parcel then place on prepared tray and lightly coat with oil. Sprinkle with cumin seeds and bake for 20 mins, or until golden. Serve with mixed greens.
