Peach Granita - cooking recipe

Ingredients
    1 1/4 cups sugar
    4 None peaches, peeled, pitted, chopped, plus extra slices to decorate
    None None fresh mint leaves, to decorate
Preparation
    Bring sugar and 3 cups water to a boil. Reduce heat and simmer without stirring for 10 mins. Let cool to room temperature then puree with peaches until smooth. Strain into a bowl, cover and freeze for 3 hours, or until just set.
    Break up ice crystals with a fork then freeze for 30 mins, or until firm. Spoon into serving bowls and decorate with peach slices and mint.
