Creamy Mascarpone Mashed Potatoes - cooking recipe
Ingredients

3 lb Idaho potatoes, peeled and chopped
2 None small onions, chopped
2 cloves garlic, peeled
4 oz mascarpone cheese
1/2 tsp chopped fresh thyme leaves
1/4 cup beef broth, warmed
Preparation

In a large pot, combine potatoes, onions, and garlic. Add enough salted water to cover and bring to a boil. Cook until tender then drain. Return to pot and mash until smooth. Stir in remaining ingredients and season.
