Tuna Salad Sandwiches - cooking recipe

Ingredients
    1 (15 oz) can tuna in brine, drained, flaked
    1/2 None red pepper, finely chopped
    1 None spring onion, thinly sliced
    1 stalk celery, finely chopped
    1 tsp finely chopped fresh flat-leaf parsley leaves
    2/3 cup mayonnaise
    2 tsp lemon juice
    1 tsp Dijon mustard
    12 slices multigrain bread
    3 oz lettuce, trimmed
Preparation
    Combine tuna, pepper, spring onion, celery and parsley in a medium bowl. Mix together mayonnaise, lemon juice and mustard then add to tuna mixture and toss to combine.
    Spread tuna mixture over 6 slices of bread. Cover with lettuce then top with remaining bread. Use a serrated bread knife to cut each sandwich into 4 triangles.
