Limoncello - cooking recipe

8 medium lemons
3 cups vodka
1 cup sugar

Using a vegetable peeler, peel lemons thinly; discard any white pith from peel. Combine peel and vodka in 1-quart sterilized bottle; seal. Store in a cool, dark place for six days, shaking jar once a day.
For the sugar syrup, combine sugar and 2 cups water in medium saucepan. Stir on high heat, without boiling, until sugar dissolves. Bring to a boil. Remove from heat; cool.
Strain vodka through fine sieve into large bowl or jug; discard peel. Stir sugar syrup into vodka.
Pour limoncello into sterilized bottles; seal immediately. Label and date bottle. Refrigerate until cold before serving.
