Chili Infused Oil - cooking recipe

Ingredients
    3 None red chilies
    1/2 cup extra virgin olive oil
    1/2 tsp whole black peppercorns
    2 sprigs thyme
    1 small strip lemon peel
Preparation
    Using a small knife, cut a 1/2 inch long slit in the side of each chili.
    Place chilies, oil, peppercorns, thyme and peel in a small saucepan over medium heat. Heat 4-5 minutes, until fragrant.
    Allow to cool slightly. Transfer to a heatproof jar. Serve or store.
