2 tbsp demerara sugar
2 sheets frozen puff pastry, thawed
1/2 cup raspberry jam
1/3 cup flaked coconut
Preparation

Preheat the oven to 400\u00b0F. Line 3 baking pans with parchment paper.
Sprinkle a clean surface with half the sugar. Place a sheet of pastry on top. Using a rolling pin, press pastry gently into sugar.
Spread half the jam on pastry; sprinkle with half the coconut. Fold opposite sides of pastry to meet in the middle. Fold each half towards the middle again; flatten slightly.
Repeat process with remaining ingredients. Wrap in plastic wrap; refrigerate for 30 mins.
Cut pastry rolls into 1/3 inch-thick slices. Arrange 2 inches apart on prepared pans.
Bake for 15-20 mins, until crisp and golden. Cool on pans 5 mins. Remove from pans; cool completely on wire racks. Store in an airtight container.
