Citrus Cod - cooking recipe
Ingredients

2 None zucchini, sliced into ribbons
2 None carrots, peeled, sliced into ribbons
4 (6 oz) thick cod fillets
4 slices orange
4 slices lemon
4 tbsp white wine
1 inch fresh ginger, peeled, finely grated
None None fresh cilantro leaves, to garnish
Preparation

Preheat oven to 375\u00b0F.
Divide vegetables between 4 large squares of parchment paper. Top with cod fillets, orange slices, lemon slices, wine and ginger. Season. Fold into parcels. Transfer to a baking tray and bake for 25 mins, until fish flakes. Serve garnished with cilantro.
