Leek And Parmesan Mini Frittatas - cooking recipe

1 tbsp butter
1 medium leek, thinly sliced
3 None eggs
1/2 cup light cream
1/2 cup grated Parmesan cheese
1 tsp Dijon mustard
2 tbsp finely chopped fresh chives
Preparation

Preheat the oven to 350\u00b0F. Oil 20 cups of a 24-cup silicone petit-four pan (capacity of each cup is 2 tbsp).
Melt butter in medium skillet on medium heat. Cook leek, stirring, for 10 mins, or until leek has softened. Cool.
Lightly whisk eggs in medium bowl. Sir in leek and remaining ingredients. Pour mixture into prepared pan.
Bake for 20 mins, or until set. Cool in pan 5 mins. Remove from pan; cool on wire rack. Serve warm or at room temperature.
