Spinach And Ham Egg Cups - cooking recipe

Ingredients
    5 oz baby spinach leaves
    2/3 cup ricotta cheese
    1 None green onion, thinly sliced
    24 slices shaved ham
    12 None eggs, at room temperature
    1/2 cup shredded Parmesan cheese
Preparation
    Preheat the oven to 400\u00b0F. Grease a 12-cup muffin pan. Place spinach in a heatproof bowl; cover with boiling water. Drain; refresh under cold water. Using hands, squeeze excess liquid from spinach. Finely chop spinach. Combine spinach, ricotta and onion in a bowl. Season.
    Line each prepared muffin cup with 2 slices of ham, overlapping slightly. Divide spinach mixture among cups. Carefully crack an egg over spinach. Sprinkle with Parmesan cheese
    Bake for 10 mins or until yolks are cooked to desired doneness. Lets stand for 5 mins. Carefully transfer to a serving plate.
