Herb And Feta Meatloaf - cooking recipe
Ingredients

2 1/4 lbs ground beef
2 oz fresh breadcrumbs
1 bunch dill, leaves only, chopped
1 bunch mint, leaves only, chopped
1 None large egg
1/3 cup mild tomato salsa, plus 2 tablespoons extra
1/4 cup sour cream
2 None scallions, finely chopped
1 None lemon, grated zest
7 oz feta cheese, cut into 3/4 inch cubes
10 oz baby plum or cherry tomatoes
Preparation

Preheat oven to 350\u00b0F. Lightly grease and line an 8 inch pie dish with parchment paper.
In a large bowl, combine beef, breadcrumbs, herbs, egg, salsa, sour cream, onion and zest. Season to taste and mix well.
Stir in feta. Press firmly into dish. Spread top with extra salsa and press in tomatoes. Bake 35-40 minutes, or until juices run clear when tested with a skewer.
Rest 10 minutes before slicing into wedges. Serve with salad or vegetables.
