Stir-Fried Scallops With Green Vegetables - cooking recipe

Ingredients
    2 tbsp vegetable oil
    10.5 oz scallops, trimmed, halved horizontally
    1 None medium red onion, sliced
    1 clove garlic, minced
    2/3 inch fresh ginger, sliced
    1 None long red chili, finely sliced
    1 bunch broccolini, sliced
    1 bunch asparagus, trimmed and sliced
    3.5 oz snow peas, trimmed
    2 tbsp oyster sauce
    1 tbsp soy sauce
    1 tsp sugar
Preparation
    In a wok or large frying pan, heat 1 tbsp oil. Season scallops then sear for 30 seconds per side. Set aside. Add remaining oil and stir-fry onion, garlic, ginger and chili for 30 seconds, until fragrant. Add vegetables and stir-fry for 1 min. Add oyster sauce, soy sauce and sugar. Cook for 1-2 mins, until bubbling. Return scallops to pan and cook for 30 seconds to heat through.
