Sausage And Tomato Pilaf - cooking recipe
Ingredients

1 tbsp olive oil
3 None thick beef sausages
1 None onion, chopped
1 None red pepper, seeded, sliced
2 cloves garlic, crushed
14 oz Arborio rice
1/4 tsp cayenne pepper
4 cups hot chicken stock
14 oz can diced tomatoes
14 oz can chick peas, rinsed, drained
5 oz frozen peas
1/2 oz chopped parsley
None None green salad, crusty bread, to serve
Preparation

Heat oil in a frying pan on high. Cook sausages 4-5 mins, until cooked through. Remove from pan and slice. Saute onion and pepper in same pan 2-3 mins. Stir in rice and cayenne pepper. Return sausage to pan along with half of stock. Bring to a boil. Reduce heat and simmer 3-4 mins, until liquid has been absorbed. Add tomatoes and remaining stock. Cook, uncovered, 10 mins, until liquid is absorbed and rice is tender. Add chickpeas and peas. Heat, stirring, 2 mins. Sprinkle with parsley and serve with salad and crusty bread.
