Baked Salmon And Tomato Pasta - cooking recipe

12 oz fusilli pasta
1 tbsp olive oil
1 None red onion, chopped
1 cup sun-dried tomatoes, halved
1/2 cup roasted red peppers (from a jar), drained, sliced
2 sprigs fresh basil, leaves removed
2 (14 oz cans) diced tomatoes
14 oz skinless salmon fillet, chopped
1/3 cup lemon juice
10 slices stale white bread, torn
7 tbsp butter, chopped
3 tbsp fresh flat-leaf parsley leaves
1 tbsp grated lemon zest
2 cloves garlic, crushed
Preparation

Preheat oven to 400\u00b0F. Cook pasta in a large pot of boiling salted water according to pack instructions. Drain well, return to pan.
Meanwhile, heat oil in a frying pan on high. Saute onion for 2-3 mins. Stir in dried tomatoes, peppers and basil. Cook for 1-2 mins. Add canned tomatoes and bring to a boil. Simmer, covered, for 10 mins.
Remove from heat, add pasta, salmon and lemon juice and toss well. Spoon into a 10-cup ovenproof dish.
Place the bread, butter, parsley, lemon zest and garlic in a food processor. Pulse until roughly chopped. Season with salt and black pepper. Scatter over the pasta and bake for 15-20 mins, until salmon is cooked through and topping is golden and crisp.
