Best Ever Sponge Cake - cooking recipe

4 None large eggs
3/4 cup granulated sugar
1 cup self-rising flour, plus 2 tbsp
1 tbsp cornstarch
1 tbsp butter, mixed with 1/3 cup boiling water
6 tbsp lemon butter
3/4 cup whipped cream
1 tbsp powdered sugar
Preparation

Preheat oven to 350\u00b0F. Grease 2 - 8 inch round cake pans.
Whisk eggs until thick and foamy. Gradually add sugar, about 1 tbsp at a time, beating until sugar is dissolved between additions. Sift flour and cornstarch together 3 times. Sift over egg mixture and fold in until just combined. Pour butter-water mixture down side of bowl and fold through egg mixture. Transfer to prepared pans and bake for 25 mins. Immediately turn out onto wire racks covered with parchment paper. Turn top-side up to cool.
Place 1 sponge cake on a serving platter. Spread lemon butter and whipped cream over top. Top with remaining cake then dust with powdered sugar.
