Creamy Pea Soup - cooking recipe

Ingredients
    1 tbsp butter
    1 None onion, chopped
    3.5 oz potato, diced
    10.5 oz frozen peas
    2 3/4 cups vegetable stock
    1/2 cup heavy cream, plus 5 tbsp
    None None freshly grated nutmeg, to serve
    None None chopped fresh chives, to serve
Preparation
    Melt butter in a saucepan. Sweat onion for 5 mins, until very soft. Add potato and cook, stirring, for 2 mins. Add peas and stock. Bring to a gentle simmer. Cover with a lid and cook very gently for 20 mins.
    Add 1/2 cup cream and a generous grating of nutmeg. Blend until smooth. Season.
    Ladle into serving bowls and drizzle with remaining cream. Serve sprinkled with chives.
