Goat Cheese Puffs - cooking recipe

Ingredients
    1 sheet frozen puff pastry, thawed
    5 oz goat cheese, sliced into 16 rounds
    1/4 cup chopped pistachio kernels
    1 tbsp thyme leaves
    None None Honey, to drizzle
Preparation
    Preheat the oven to 400\u00b0F. Line a baking pan with parchment paper.
    Using a 2 1/2-inch round cookie cutter, cut 16 rounds from pastry. Place on prepared pan and prick with a fork. Top each with a slice of goat cheese. Sprinkle with pistachio and thyme. Season with pepper.
    Bake for 8-10 mins, until pastry is puffed and crisp. Drizzle with honey and cool.
