Flounder With Bacon, Potatoes And Salad - cooking recipe

Ingredients
    4 tbsp red wine vinegar
    1 tsp sugar
    4 tbsp sunflower oil
    150 g lettuce, chopped
    300 g tomatoes, sliced
    2 None onions, peeled and finely diced
    120 g smoked bacon, cut into strips
    1/2 bunch parsley, chopped
    1 kg potatoes, peeled and halved
    4 None flounders (about 350g each)
    6 tbsp plain flour
    100 g clarified butter
Preparation
    For the vinaigrette, whisk together the vinegar and sugar and season to taste. Slowly add the oil while whisking vigorously. Toss the lettuce, tomatoes and 1 diced onion with the vinaigrette.
    Cook the bacon in a frying pan over a medium heat until crisp. After about 8 mins, add the remaining diced onion and saute for 3 mins. Cook the potatoes in boiling salted water for 20 mins.
    Coat the fish in seasoned flour. Heat the clarified butter in 2 large frying pans and fry the fish for 4 mins on each side. Serve the fish, salad, potatoes and bacon, garnish with parsley.
